Flavours of Vanilla, Brown Sugar, Cinnamon


A fresh 2022 harvest from Rancho Morelia, in the heart of El Triunfo nature reserve (classified by UNESCO) in the Chiapas region of Mexico.  This lot delivers a complex cup thats delightfully sweet, clean with a medium body and acidity. One of the varietals in this lot, Bourbon, harbours a desirable sweetness which lends itself very well to this coffee. Rancho Morelia processes the coffee through their unique extended 36 hour fermentation process, which enables the development of new flavors such as cinnamon. This is  usually rare in traditional washed coffees predominantly offering cocoa / nutty / citrus cup profiles.


Our suppliers Edelmira have partnered with Rancho Morelia, and several other Fincas and Ranchos in the Chiapas Region, Mexico, to build long lasting win-win relationships for farmers and roasters. Regarding Rancho Morelia, Don Cardenas Sr, and his two sons Juan and Jaime, undertook the development of his land into a farm 100% dedicated to coffee.  Methodically applying all the learnings gained throughout a 40 years long career in the most important Finca of Mexico. This led to the signature 36 hours extended fermentation process, and now both sons took over the operations at Rancho Morelia from their father back in 2005.


The farm, which today has more than 15 ha of plantations organized into plots, is one of the highest farms in Chiapas. The plot peaks at just over 2,000 meters above sea level. The farm has its own "Wet Mill" where the cherries are taken care of directly after harvest. Once the patio drying stage is complete, Edelmira buys the parchment coffee from the Cardenas family and supervises the preparation of the green coffee at the "Dry Mill" where the green coffee is sorted and bagged for export according to the highest quality criteria.
